Borani Esfanaaj

Ingredients:

  • olive oil - 1 teaspoon
  • onion - 1 small
  • garlic - 1 clove
  • a package of spinach - 4 cups
  • salt - 0.25 teaspoon
  • bell pepper - 8 servings
  • the yogurt - 1 cup

INSTRUCTIONS

Drizzle the oil into a medium pan and saut the onion and garlic on medium-low heat until tender and the onions are almost see-through. Add the spinach and cook until leaves are wilted. Add salt and pepper Set aside to cool for about 15 minutes. In a small bowl mix together the drained yogurt and cooked spinach. Add any salt or pepper to taste. Cool in the fridge for at least another 45 minutes. Then enjoy!
